Roasted Potato Salad Recipe

A delicious roasted potato salad featuring crispy turkey bacon and flavorful herbs.

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the baby potatoes and cut them in half.
  3. In a large bowl, toss the potatoes with olive oil, salt, and pepper.
  4. Spread the potatoes on a baking sheet and roast for 25-30 minutes or until golden brown.
  5. Meanwhile, cook the turkey bacon in a skillet until crispy, then crumble.
  6. In a small bowl, whisk together apple cider vinegar, Dijon mustard, and garlic powder.
  7. Once the potatoes are done, let them cool slightly, then mix them with the red onion, parsley, crumbled bacon, and dressing.
  8. Serve warm or at room temperature.

Notes

  • This salad can be made ahead of time and stored in the refrigerator.
  • Feel free to add other vegetables.
