Easy Zuppa Toscana Soup

Ingredients

  • 4 cups chicken broth
  • 1 pound turkey bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups kale, chopped
  • 2 medium potatoes, diced
  • 1 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop into pieces.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add potatoes and chicken broth, bringing to a boil. Cook until potatoes are tender.
  4. Stir in the kale and cooked turkey bacon, letting it simmer.
  5. Add heavy cream and heat through. Serve hot.

Notes

  • For a spicier version, add red pepper flakes.
  • Can substitute turkey bacon with regular bacon if desired.
