CREAMY ROASTED GARLIC POTATO SOUP

A rich and comforting soup that features the flavors of roasted garlic and creamy potatoes, perfect for any occasion.

Ingredients

  • 6 cloves roasted garlic
  • 4 large potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
  2. Add the roasted garlic and potatoes to the pot and stir well.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth.
  5. Stir in the heavy cream, and season with salt and pepper.
  6. Serve warm, garnished with fresh herbs if desired.
