Creamy Lasagna Soup

A warm and comforting creamy lasagna soup made with turkey bacon.

  • 8 slices turkey bacon
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crisp. Remove and crumble.
  2. In the same pot, add ground turkey, onion, and garlic. Cook until browned.
  3. Add diced tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
  4. Add broken lasagna noodles and cook until tender.
  5. Stir in ricotta cheese, mozzarella, and Parmesan. Cook until melted.
  6. Top with crumbled turkey bacon and spinach just before serving.

Notes

  • For extra flavor, add red pepper flakes.
  • Try using different cheeses based on preference.
