- 1 pound boneless, skinless chicken breasts
- 1 onion chopped
- 3 cloves garlic minced
- 4 cups chicken broth
- 2 cups diced tomatoes
- 8 ounces lasagna noodles broken into pieces
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley chopped
- In a large pot, heat olive oil over medium heat. Add chicken and cook until browned. Remove and set aside.
- In the same pot, add onion and garlic, sautéing until soft.
- Pour in chicken broth and tomatoes, then add lasagna noodles, Italian seasoning, salt, and pepper.
- Bring to a simmer and cook until noodles are tender.
- Stir in heavy cream, ricotta, mozzarella, and Parmesan cheese until melted and creamy.
- Return chicken to the pot and heat through.
- Garnish with parsley before serving.
