Creamy Chicken Lasagna Soup

A hearty and creamy chicken lasagna soup that brings together all the flavors of classic lasagna in a warm, comforting bowl.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups diced tomatoes
  • 8 ounces lasagna noodles broken into pieces
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and cook until browned. Remove and set aside.
  2. In the same pot, add onion and garlic, sautéing until soft.
  3. Pour in chicken broth and tomatoes, then add lasagna noodles, Italian seasoning, salt, and pepper.
  4. Bring to a simmer and cook until noodles are tender.
  5. Stir in heavy cream, ricotta, mozzarella, and Parmesan cheese until melted and creamy.
  6. Return chicken to the pot and heat through.
  7. Garnish with parsley before serving.

Notes

  • This soup can be made ahead and reheated.
  • For extra flavor, add spinach or mushrooms.
