Zucchini Oatmeal Muffins

These Zucchini Oatmeal Muffins are a delicious and healthy treat, perfect for breakfast or a snack.

Ingredients

  • 2 cups grated zucchini
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/3 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, combine the grated zucchini, rolled oats, honey, applesauce, vegetable oil, and eggs.
  3. In another bowl, mix the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. If using, fold in the walnuts or chocolate chips.
  6. Fill the muffin tin with the batter and bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let them cool before serving.

Notes

  • These muffins can be stored at room temperature for a couple of days or in the fridge for a week.
  • They freeze well for up to 3 months.
