Zucchini Oatmeal Muffins

A deliciously healthy treat perfect for breakfast or snacks.

Ingredients

  • 2 cups shredded zucchini
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with liners.
  2. In a large bowl, mix shredded zucchini, honey, Greek yogurt, eggs, and vanilla.
  3. In another bowl, combine oats, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour the batter into the prepared muffin tin, filling each liner about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool on a wire rack before serving.

Notes

  • For added flavor, consider adding nuts or chocolate chips.
  • These muffins freeze well, so make a double batch!
