Ingredients

  • 1 cup rolled oats
  • 1/2 cup honey
  • 1/2 cup almond milk
  • 1/4 cup coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix the grated zucchini, oats, honey, almond milk, coconut oil, eggs, and vanilla extract until well combined.
  3. In another bowl, mix the baking soda, salt, and cinnamon.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fill the muffin cups about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool before serving.
