- 1 cup rolled oats
- 1/2 cup honey
- 1/2 cup almond milk
- 1/4 cup coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- Preheat oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, mix the grated zucchini, oats, honey, almond milk, coconut oil, eggs, and vanilla extract until well combined.
