Zucchini Oatmeal Muffins

  • 1 cup grated zucchini
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the grated zucchini, oats, honey (or maple syrup), oil, eggs, and vanilla extract.
  3. In another bowl, combine the dry ingredients: baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. If desired, fold in nuts or chocolate chips.
  5. Line a muffin tin with liners and fill each about 2/3 full with the batter.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.

Notes

  • Store muffins in an airtight container for up to a week.
  • These muffins freeze well; wrap them individually and store in the freezer for up to 3 months.
