  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the grated zucchini, turkey bacon, eggs, oil, and vanilla extract.
  3. In another bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and sugars.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Pour the batter into a greased loaf pan and smooth the top.
  6. Bake for 60-70 minutes or until a toothpick comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
