Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, vegetable oil, brown sugar, and granulated sugar until combined.
  3. Add eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
