Veggie Pot Pie Soup

  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups potatoes, diced
  • 1 cup frozen peas
  • 1 cup corn
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, then sauté until softened.
  2. Add the garlic and cook for another minute.
  3. Pour in the vegetable broth and add the potatoes, peas, corn, thyme, rosemary, salt, and pepper. Bring to a boil.
