- 1 cup corn, frozen or fresh
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 8 corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheese, optional
- 1/4 cup cilantro, chopped
