- 2 large zucchini
- 1 cup ricotta-style vegan cheese
- 1/2 cup spinach, chopped
- 1/4 cup nutritional yeast
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 cups marinara sauce
- 1 tablespoon olive oil
- Salt to taste
- Preheat your oven to 375°F (190°C).
- Slice the zucchini lengthwise into thin strips.
- In a bowl, combine the vegan cheese, spinach, nutritional yeast, garlic powder, onion powder, and salt.
- Lay the zucchini strips on a flat surface, place a spoonful of the filling at one end, and roll it up.
- Spread some marinara sauce on the bottom of a baking dish and place the zucchini rolls seam-side down.
- Top the rolls with more marinara sauce and drizzle with olive oil.
- Bake for about 25-30 minutes until the zucchini is tender.
