  • 2 large zucchini
  • 1 cup ricotta-style vegan cheese
  • 1/2 cup spinach, chopped
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into thin strips.
  3. In a bowl, combine the vegan cheese, spinach, nutritional yeast, garlic powder, onion powder, and salt.
  4. Lay the zucchini strips on a flat surface, place a spoonful of the filling at one end, and roll it up.
  5. Spread some marinara sauce on the bottom of a baking dish and place the zucchini rolls seam-side down.
  6. Top the rolls with more marinara sauce and drizzle with olive oil.
  7. Bake for about 25-30 minutes until the zucchini is tender.
