- 4 medium zucchini
- 1 cup ricotta-style tofu
- 1 cup marinara sauce
- 1/4 cup nutritional yeast
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 375°F (190°C).
- Slice the zucchini lengthwise into thin strips.
- In a bowl, mix the ricotta-style tofu, nutritional yeast, dried basil, garlic powder, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place a spoonful of the tofu mixture on each zucchini slice and roll it up.
- Place the rolled zucchini in the baking dish, seam side down.
- Top with remaining marinara sauce.
- Bake for 25-30 minutes or until heated through.
