  • 4 medium zucchini
  • 1 cup ricotta-style tofu
  • 1 cup marinara sauce
  • 1/4 cup nutritional yeast
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into thin strips.
  3. In a bowl, mix the ricotta-style tofu, nutritional yeast, dried basil, garlic powder, salt, and pepper.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Place a spoonful of the tofu mixture on each zucchini slice and roll it up.
  6. Place the rolled zucchini in the baking dish, seam side down.
  7. Top with remaining marinara sauce.
  8. Bake for 25-30 minutes or until heated through.
