  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup corn
  • 1 cup diced bell peppers
  • 10 small corn tortillas
  • 1 tablespoon olive oil
  • Salt to taste
  • 1 avocado for topping
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mash the black beans and mix in cumin, chili powder, corn, and bell peppers.
  3. Warm the corn tortillas in a skillet until pliable.
  4. Place a spoonful of the filling on each tortilla and roll tightly.
  5. Place the taquitos on a baking sheet, brush with olive oil, and sprinkle with salt.
  6. Bake for 15-20 minutes or until golden brown and crispy.
