Vegan Pumpkin Wild Rice Soup

A hearty and warming vegan soup that combines the rich flavors of pumpkin and wild rice.

  • 2 cups pumpkin puree
  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and garlic, cooking until softened.
  3. Stir in the carrots and cook for another 5 minutes.
  4. Add the wild rice, pumpkin puree, and vegetable broth.
  5. Season with thyme, sage, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 40-45 minutes until rice is tender.
  7. Adjust seasoning and serve hot.
