  • 1/2 cup granulated sugar
  • 1/2 cup coconut oil, melted
  • 1/4 cup non-dairy milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup vegan chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the brown sugar, granulated sugar, melted coconut oil, non-dairy milk, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients until a dough forms.
  5. Fold in the vegan chocolate chips.
  6. Drop tablespoon-sized balls of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For a chewier cookie, refrigerate the dough for 30 minutes before baking.
  • These cookies can be stored in an airtight container for up to one week.
