A delicious vegan and gluten-free comfort bowl featuring turkey bacon delights.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup sliced mushrooms
  • 1 cup chopped spinach
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  2. In a pan, heat olive oil over medium heat and cook turkey bacon until crispy. Remove and chop.
  3. Add mushrooms and spinach to the same pan, seasoning with garlic and onion powder. Sauté until tender.
  4. Fluff quinoa with a fork and mix in sautéed vegetables and chopped turkey bacon.
  5. Season with salt and pepper, and serve warm.

Notes

  • Can substitute turkey bacon with a vegan alternative for a fully vegan dish.
