  • 4 large egg yolks

Instructions

  1. In a medium saucepan, combine the milk, heavy cream, sugar, cornstarch, and salt. Whisk together until smooth.
  2. In a separate bowl, whisk the egg yolks until pale and slightly thickened.
  3. Gradually pour a small amount of the hot milk mixture into the egg yolks while whisking constantly to temper the yolks.
  4. Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture.
  5. Cook over medium heat, stirring consistently until the mixture thickens and starts to bubble.
  6. Remove from heat and stir in the vanilla extract.
  7. Strain the custard through a fine-mesh sieve into a bowl to remove any lumps. Cover with plastic wrap and chill before serving.
