Tiramisu Cookies

Tiramisu Cookies are a delightful dessert combining the flavors of classic tiramisu with the convenience of a cookie.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon espresso powder
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/4 cup mascarpone cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream the butter and sugar together until light and fluffy.
  3. Add in the vanilla extract and espresso powder, mixing well.
  4. In another bowl, combine flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring to combine.
  6. Fold in the chocolate chips and mascarpone cheese.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are set.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger coffee flavor, increase the amount of espresso powder.
  • Substitute mascarpone with cream cheese if unavailable.
