- 4 cups corn kernels
- 6 slices turkey bacon
- 1 cup diced chicken ham
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1/2 cup chopped green onions
- Cook turkey bacon in a large pot over medium heat until crispy. Remove and crumble.
- In the same pot, add olive oil and sauté onions and garlic until translucent.
- Add corn, chicken ham, and diced potatoes, then pour in chicken broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in heavy cream, salt, pepper, thyme, and crumbled bacon. Heat through.
- Garnish with green onions before serving.
