  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 1 small onion, chopped
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix chicken, half of the cheese, onion, cumin, garlic powder, salt, and pepper.
  3. Heat tortillas to soften; fill each with the chicken mixture and roll.
  4. Place in a baking dish, seam side down, and cover with enchilada sauce.
