  • 4 slices turkey bacon
  • 1 can black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheese
  • 2 green onions, chopped

Instructions

  1. Cook the turkey bacon in a skillet until crispy, then crumble it.
  2. In a large bowl, combine the cooked rice, black beans, corn, diced tomatoes, and taco seasoning.
  3. Mix in the crumbled turkey bacon and half of the cheese.
