A delightful summer dessert featuring fresh berries and peaches atop a creamy cheesecake.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 2 cups fresh mixed berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, sliced
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan to form the crust.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In another bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla extract and lemon juice, and blend well.
  5. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  6. Spread the cream cheese mixture over the cooled crust.
  7. Top with sliced peaches and mixed berries.
  8. Chill the cheesecake in the refrigerator for at least 4 hours before serving.

Notes

  • For a richer flavor, add a tablespoon of almond extract to the cream cheese mixture.
  • Garnish with additional fresh fruits before serving.
