Stunning Pink Dragon Fruit Layer Cake

  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup dragon fruit puree
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract for frosting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the dragon fruit puree and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Divide the batter evenly among the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. For the frosting, whip the heavy cream until soft peaks form, then add the powdered sugar and vanilla, continuing to whip until stiff peaks form.
  11. Once the cakes are completely cool, frost between the layers and around the outside of the cake as desired.

Notes

  • For a more intense flavor, add more dragon fruit puree.
  • Ensure the heavy cream is cold for better whipping results.
