- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup dragon fruit puree
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract for frosting
- Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the dragon fruit puree and vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly among the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

- For the frosting, whip the heavy cream until soft peaks form, then add the powdered sugar and vanilla, continuing to whip until stiff peaks form.
- Once the cakes are completely cool, frost between the layers and around the outside of the cake as desired.
