- 4 slices turkey bacon
- 1 onion, diced
- 2 bell peppers, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 tablespoon Italian seasoning
- Salt to taste
- Pepper to taste
- 1 cup cooked rice
- 1/2 cup shredded cheese (optional)
