  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs

  • ½ cup buttermilk
  • 1 cup fresh strawberries, pureed
  • ½ cup whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, and mix until incorporated.
  6. Fold in the pureed strawberries and whipped cream.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for about 60 minutes or until a toothpick comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
