Spinach Quiche Muffins

A delightful blend of turkey bacon, spinach, and cheese baked into easy-to-eat muffins that make a perfect breakfast or snack.

  • 2 cups fresh spinach, chopped
  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup shredded cheese (cheddar or your choice)
  • 6 eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and milk.
  3. Add the chopped spinach, crumbled turkey bacon, shredded cheese, salt, and pepper to the egg mixture.
  4. Grease a muffin tin and fill each cup with the mixture.
  5. Bake for 20-25 minutes or until the muffins are set and golden.
  6. Allow to cool slightly before removing from the tin.
