Spinach Quiche Muffins

A delicious combination of spinach, turkey bacon, and eggs baked into a convenient muffin form.

  • 2 cups fresh spinach, chopped
  • 6 large eggs
  • 1 cup turkey bacon, cooked and chopped
  • 1 cup shredded cheese
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs and milk.
  3. Add the chopped spinach, turkey bacon, cheese, salt, and pepper to the egg mixture.
  4. Grease a muffin tin and pour the mixture into each cup.
  5. Bake for 20-25 minutes or until the muffins are set and lightly golden.
  6. Let cool for a few minutes before removing from the tin.

Notes

  • Use any cheese of your choice for added flavor.
  • These muffins can be made ahead and frozen for later use.
