Spinach, Lentil, and Butter Bean Soup

A hearty and healthy soup made with spinach, lentils, and butter beans.

Ingredients

  • 1 cup lentils
  • 1 can butter beans
  • 2 cups fresh spinach
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Stir in the lentils, cumin, and vegetable broth.
  4. Bring to a boil, then lower heat and simmer for 20 minutes.
  5. Add butter beans and spinach, cook until spinach wilts.
  6. Season with salt and pepper before serving.

Notes

  • For a creamier soup, blend half of it before serving.
  • Garnish with fresh herbs for added flavor.
