  • 1 cup canned pumpkin puree

  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese with an electric mixer until smooth. Gradually add sugar, pumpkin puree, eggs, vanilla, and spices, mixing until fully combined.
  4. Pour the cheesecake mixture over the crust in the springform pan.
  5. Bake in the preheated oven for 50-60 minutes or until the center is set.
