  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 4 cups whipped cream
  • ½ cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa, baking soda, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla. Mix until smooth.
  4. Carefully stir in boiling water until combined.
  5. Pour batter into prepared pans and bake for 30-35 minutes.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  7. Once cool, frost with whipped cream and decorate with coconut if desired.
