  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter, then press this mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract, ground cinnamon, and salt.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar.
  9. Once cool, refrigerate for at least 4 hours before serving.

Notes

  • For a stronger cinnamon flavor, increase the amount of cinnamon in the cheesecake filling.
  • Serve with whipped cream and a sprinkle of cinnamon on top.
