- 1 pound ground beef
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 package (1 ounce) taco seasoning
- 4 cups beef broth
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup diced onion
- 1 cup diced bell pepper
- In a skillet, brown ground beef over medium heat, then drain excess fat.
- Transfer the beef to the slow cooker.
- Add black beans, corn, diced tomatoes, taco seasoning, beef broth, onion, and bell pepper to the slow cooker.
- Stir to combine, then cover and cook on low for 6 hours or high for 3 hours.
