  • 1 pound ground beef
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 package (1 ounce) taco seasoning
  • 4 cups beef broth
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup diced onion
  • 1 cup diced bell pepper

Instructions

  1. In a skillet, brown ground beef over medium heat, then drain excess fat.
  2. Transfer the beef to the slow cooker.
  3. Add black beans, corn, diced tomatoes, taco seasoning, beef broth, onion, and bell pepper to the slow cooker.
  4. Stir to combine, then cover and cook on low for 6 hours or high for 3 hours.
  5. Just before serving, stir in shredded cheese until melted.
