Slow Cooker Chicken Enchilada Casserole

A delicious and easy way to enjoy chicken enchiladas using a slow cooker.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 6 corn tortillas, cut into strips

Instructions

  1. In a slow cooker, layer half of the chicken, followed by half of the enchilada sauce.
  2. Add a layer of black beans, corn, and spices.
  3. Place half of the tortilla strips on top, then sprinkle with half of the cheese.
  4. Repeat the layers with the remaining ingredients.
  5. Cover and cook on low for 4-6 hours until cheese is melted and bubbly.

Notes

  • Feel free to add additional toppings like avocado or sour cream before serving.
