  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 pitas
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Add the chicken thighs and coat evenly with the spice mixture.
  4. Place the chicken on a baking sheet and arrange the cherry tomatoes around the chicken.
  5. Bake for 25-30 minutes, or until the chicken is cooked through.
  6. While the chicken is baking, warm the pitas in the oven for the last 5 minutes.
  7. Once cooked, let the chicken rest for a few minutes before slicing.
  8. To serve, fill each pita with sliced chicken, cucumbers, feta cheese, and parsley.
