  • 1 cup cooked sausage, crumbled
  • 1/2 cup shredded cheese
  • 4 large tortillas
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together eggs, salt, and pepper.
  3. Cook the sausage in a skillet over medium heat until browned. Drain excess fat.
  4. Add the egg mixture to the skillet and scramble until fully cooked.
  5. Lay a tortilla flat, add a portion of the egg and sausage mixture, and sprinkle cheese on top.
  6. Roll the tortilla tightly and place on a baking sheet.
