- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup semi-sweet chocolate chips
- 1 cup heavy cream
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/2 teaspoon sea salt
- 1/4 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom and sides of a tart pan.
- Bake the crust for 10 minutes, then let it cool.
- In a saucepan, combine sugar, corn syrup, and 1/4 cup of water. Stir over medium heat until sugar dissolves.
- Bring to a boil without stirring until it turns a deep amber color, then remove from heat.
- Stir in heavy cream, vanilla, and sea salt until smooth.
- Pour the caramel mixture into the tart crust and let it cool.
- In a separate saucepan, heat heavy cream until it simmers. Pour over chocolate chips and let sit for 5 minutes before stirring until smooth.
- Pour the chocolate ganache over the cooled caramel and let it set in the fridge for at least 2 hours.
- Serve chilled and enjoy!
