- 1 pound sushi rice
- 2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 pound cooked salmon, flaked
- 1/2 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1/4 cup diced green onions
- 1 sheet nori, cut into strips
- Preheat oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a pot and cook according to package instructions.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this into cooked rice until well combined.
- In a separate bowl, mix flaked salmon, mayonnaise, sriracha, and green onions.
- Spread the seasoned rice in a baking dish, then layer the salmon mixture on top.
- Bake in the preheated oven for 20-25 minutes until heated through.
- Serve hot with nori strips on the side.
