Rotisserie Chicken Mushroom Soup

A delicious and comforting rotisserie chicken mushroom soup that is easy to make.

Ingredients

  • 1 rotisserie chicken shredded
  • 2 cups mushrooms, sliced
  • 1 onion chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cream
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, cooking until translucent.
  3. Add sliced mushrooms and cook until softened.
  4. Pour in chicken broth and bring to a simmer.
  5. Add shredded rotisserie chicken and thyme, cooking for another 5 minutes.
  6. Stir in cream and season with salt and pepper.
  7. Serve hot and enjoy!

  • Store leftovers in an airtight container in the fridge.
