- 2 sweet potatoes
- 4 slices turkey bacon
- 1 red onion
- 1 cup spinach
- 1/2 cup feta cheese
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- salt to taste

- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss with olive oil, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender.
- Meanwhile, cook the turkey bacon in a skillet over medium heat until crispy. Remove and crumble.
- In the same skillet, add diced red onion and sauté until soft.
- In a large bowl, combine roasted sweet potatoes, sautéed onions, spinach, feta cheese, and crumbled turkey bacon.
- Drizzle with balsamic vinegar, toss gently, and serve warm.
