Roasted Sweet Potato Salad

A delicious twist on a classic salad, featuring roasted sweet potatoes and turkey bacon.

Ingredients

  • 2 sweet potatoes
  • 4 slices turkey bacon
  • 1 red onion
  • 1 cup spinach
  • 1/2 cup feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss with olive oil, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender.
  4. Meanwhile, cook the turkey bacon in a skillet over medium heat until crispy. Remove and crumble.
  5. In the same skillet, add diced red onion and sauté until soft.
  6. In a large bowl, combine roasted sweet potatoes, sautéed onions, spinach, feta cheese, and crumbled turkey bacon.
  7. Drizzle with balsamic vinegar, toss gently, and serve warm.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Feel free to add other vegetables like bell peppers or kale.
