Roasted Potato Salad Recipe

This roasted potato salad is an easy and flavorful side dish featuring crispy turkey bacon.

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, toss the potatoes with olive oil, garlic powder, salt, and pepper.
  4. Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden brown.
  5. Meanwhile, cook the turkey bacon in a skillet until crispy. Remove and chop into pieces.
  6. In a bowl, whisk together the Dijon mustard and remaining olive oil.
  7. Add the roasted potatoes, turkey bacon, and parsley to the bowl and toss to combine.
  8. Serve warm or at room temperature.
