Roasted Italian Sweet Potato Soup

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube sweet potatoes, toss with olive oil, and roast for 25-30 minutes.
  3. In a large pot, sauté onions and garlic until translucent.
  4. Add roasted sweet potatoes, broth, Italian seasoning, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Blend the soup until smooth, then stir in heavy cream.
  7. Serve hot, garnished with herbs if desired.
