Ricotta Pancakes

Ingredients

  • 1 cup ricotta cheese
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 2 tablespoons butter, melted

Instructions

  1. In a large bowl, combine ricotta, eggs, milk, and vanilla extract.
  2. In another bowl, mix flour, baking powder, salt, and sugar together.
  3. Combine the wet ingredients with the dry ingredients.
  4. Stir in the melted butter until just combined.
  5. Heat a non-stick skillet over medium heat and pour batter to form pancakes.
  6. Cook until bubbles form, then flip and cook until golden brown.
