Quick Taco Pasta Salad

Ingredients

  • 2 cups cooked pasta
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, rinsed
  • 1 cup corn, canned or frozen
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1/2 cup sour cream

Instructions

  1. In a skillet, cook the ground beef until browned.
  2. Add taco seasoning and water as per the packet directions, and simmer.
  3. In a large bowl, combine the cooked pasta, black beans, corn, bell pepper, cherry tomatoes, and cooked beef mixture.
  4. Stir in salsa and sour cream until well mixed.
  5. Top with shredded cheese and serve.

Notes

  • For added crunch, include tortilla chips as a topping.
