Quick Southwest Chicken Salad

A delightful and easy-to-make salad featuring chicken and Southwest flavors.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1 cup cilantro, chopped
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt to taste

Instructions

  1. In a large bowl, combine shredded chicken, black beans, corn, cherry tomatoes, avocado, red onion, and cilantro.
  2. In a separate bowl, whisk together lime juice, olive oil, cumin, chili powder, and salt until well combined.
  3. Pour the dressing over the salad and toss to combine.
  4. Sprinkle with cheddar cheese before serving.

Notes

  • This salad can be made ahead of time and stored in the refrigerator.
  • Add chopped jalapeños for an extra kick!
