- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup red onion, diced
- 1 cup cilantro, chopped
- 1/2 cup cheddar cheese, shredded
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- salt to taste
- In a large bowl, combine shredded chicken, black beans, corn, cherry tomatoes, avocado, red onion, and cilantro.
- In a separate bowl, whisk together lime juice, olive oil, cumin, chili powder, and salt until well combined.
- Pour the dressing over the salad and toss to combine.
- Sprinkle with cheddar cheese before serving.
