  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, sugar, brown sugar, and vegetable oil.
  3. Add eggs and mix until combined.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Slowly add the dry ingredients to the pumpkin mixture.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until a toothpick comes out clean.
  8. Let them cool completely.
  9. For the filling, beat together the cream cheese, powdered sugar, and vanilla.
  10. Spread filling between two cookies to make sandwiches.
