- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- Preheat the oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, sugar, brown sugar, and vegetable oil.
- Add eggs and mix until combined.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Slowly add the dry ingredients to the pumpkin mixture.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until a toothpick comes out clean.
- Let them cool completely.
- For the filling, beat together the cream cheese, powdered sugar, and vanilla.
- Spread filling between two cookies to make sandwiches.
