Pumpkin S’mores Bars

Ingredients

  • 1 cup pumpkin puree
  • 1 cup graham cracker crumbs
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mini marshmallows
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the pumpkin puree, graham cracker crumbs, sugar, melted butter, cinnamon, and nutmeg.
  3. Press the mixture into the bottom of a greased baking pan.
  4. Bake for 15-20 minutes or until set.
  5. Remove from the oven and sprinkle the mini marshmallows and chocolate chips on top.
  6. Return to the oven and bake for an additional 5-10 minutes until marshmallows are golden brown.
  7. Allow to cool before slicing into bars.

Notes

  • For a spicier flavor, add a pinch of ground ginger.
  • These bars are best enjoyed warm, but can be stored for later.
