  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1/2 cup whipped cream for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a cupcake tin.
  3. In another bowl, beat together cream cheese, pumpkin puree, powdered sugar, vanilla, and pumpkin spice until smooth.
  4. Pour the pumpkin filling over the crust in the cupcake tin.
  5. Bake for 15-20 minutes, or until set.
  6. Let cool, then refrigerate for at least 2 hours.
  7. Top with whipped cream before serving.
